Middle Eastern Broiled Chicken Skewers

Ingredients
 
2 lbs chicken thigh meat (boneless, skinless), cut into bite-sized pieces
 
Marinade
¼ cup olive oil
¼ cup lemon juice
2 Tbsp kabab spice
½ tsp salt
 


Preparation steps:
  1. Marinate the chicken:
    In a large bowl, prepare the marinade.
    Cut the chicken into large bite-sized pieces and add them to the marinade.
    Mix well to coat the chicken evenly.
    Marinate for 45 minutes to overnight.
  2. Prepare the chicken skewers:
    Thread the chicken onto the skewers.
    Place the skewers on a baking sheet lined with aluminum foil.
  3. Broil the chicken:
    Turn the oven broiler on high. Place the baking sheet on the second rack from the top.
    Broil for 4-7 minutes.
  4. Flip and broil again:
    Carefully remove the baking sheet from the oven and discard any accumulated liquids by pouring them into the sink.
    Flip the skewers and broil for an additional 4-7 minutes.
